It was not until travelling to Brazil and spending time on the long, lush beaches that we learned about cheese on a stick or Queijo coalho. The brand of cheese to look out for is called Halloumi cheese. This is no ordinary cheese on a stick. It is a special kind of cheese that does not melt when exposed to heat, but instead gets nice and crispy. It makes it perfect for barbecuing or frying for certain dishes without making a mess. This is not a delicious cheese when eaten raw (and it kind of squeaks when it is raw), but when cooked over a fire like a kebab with some salt, pepper and dried oregano, you will be hailing down the lovely beach vendors as soon as they come into sight!
